A really healthy and tasty Asian inspired salad
for the dressing i grind 2 cloves of garlic with two teaspoons of sriracha and a splash of soy sauce add half a lemon and around 100 grams of crushed peanuts combine together in a pestle and mortar. i coat half of the salad in this,with the other half i marinade two chicken breast and cook on a griddle pan-this i completely optional as the salad woks great with no meat also.
Add soba noodles to boiling water for 5 minutes then blanch in cooled water drain and add to the salad and dressing
