Wash the green and yellow zucchini and cut them into thin slices.
Fry the slices in a pan with oil.
Put the pepper under the broiler (or in the microwave for about 1 min) then put it in a bag to make it easier to peel.
Cut it into thin slices.
Cut the carrots into thin slices and boil them in water.
Arrange all the vegetables in a deep dish.
Mince the garlic and add it to the dish, along with the anchovies. Season with olive oil and balsamic vinegar. Add salt and pepper as desired. Decorate with a few basil leaves. Mix just before serving
