This is a fresh treat.
You can use any fruit filling you like.
Heat oven 275/140 degrees.
Whisk egg whites until frothy.
Add the cream of tartar & salt.
Add sugar gradually until eggs are stiff peaks.
Spoon circles of the meringue mixture onto baking paper .
Bake for 1 hr 15 mins.
Turn off the oven & leave the meringue in until cold.
For the filling...
Whisk the cream until soft peaks.
Add the mascarpone & combine.
Don't over mix.
Add the icing sugar.
Fold in the lemon curd.
Layer the meringue & cream.
Drizzle with melted chocolate.
