Crispy panko coated avocado tacos with a zesty lime soured cream!
Pop the soured cream into a bowl and grate in the zest from the lime.
Chop the lime in half and squeeze in the juice from half the lime and add a dash or two of smoked tabasco.
Mix together with the smoked paprika and season with salt and pepper.
Mix together the panko with the cornmeal.
Mix in some dried herbs.
Slice the avocado into strips and squeeze the other half of the lime on top.
Pop the avocado into the panko.
Make sure the avocado is all coated in panko.
Lightly fry the tortillas in a little oil until crispy.
Then fry the avocado until golden and crispy.
Top the tortillas with some lettuce and then top with the crispy avocado.
Top with the sour cream mix.
Sprinkle with pine nuts, a little more smoked paprika and serve with lime wedges.
