Step 1Pop the soured cream into a bowl and grate in the zest from the lime.

Step 2Chop the lime in half and squeeze in the juice from half the lime and add a dash or two of smoked tabasco.

Step 3Mix together with the smoked paprika and season with salt and pepper.

Step 4Mix together the panko with the cornmeal.

Step 5Mix in some dried herbs.

Step 6Slice the avocado into strips and squeeze the other half of the lime on top.

Step 7Pop the avocado into the panko.

Step 8Make sure the avocado is all coated in panko.

Step 9Lightly fry the tortillas in a little oil until crispy.

Step 10Then fry the avocado until golden and crispy.

Step 11Top the tortillas with some lettuce and then top with the crispy avocado.

Step 12Top with the sour cream mix.

Step 13Sprinkle with pine nuts, a little more smoked paprika and serve with lime wedges.
