Very tasty and easy to make.
Great for freezing.
Heat oven 200/400 degrees.
Slice aubergine, place on tray.
Drizzle with oil.
Bake for 20 mins until tender.
Brown mince, onion & garlic.
Add tomato, sauce & herbs.
Cook for a few mins until thickened.
Layer the bechamel, aubergine &sauce.
Top with cheese.
Bake for 20 mins.
