Step 1Heat oven 200/400 degrees.
Slice aubergine, place on tray.
Drizzle with oil.
Bake for 20 mins until tender.

Step 2Brown mince, onion & garlic.

Step 3Add tomato, sauce & herbs.
Cook for a few mins until thickened.

Step 4Layer the bechamel, aubergine &sauce.

Step 5Top with cheese.
Bake for 20 mins.
