  • How to bake a cake. Japanese Castella Cake - Step 1
    Step 1

    In a mixing bowl, crack the eggs, add the sugar and beat with an electric mixer on boiled water for 6-10 minutes. The size will double by 4 times. Add the honey to the egg mixture and mix for another minute.

    Shift the flour into the mixture and then whisk the mixture until there are no clumps of flour. Do not over mix, this will lead to a flat cake.
    Line some parchment paper in a tin and then pour the cake mixture into the tin. With a skewer remove any large air bubbles.

    Bake the cake at 180 degrees celsius for 10-15 minutes until golden brown then turn the oven to 170 degrees celsius and then cover with a foil and bake for another 30-40 minutes.
    Once the cake has done, put it on a wire rack and set aside to cool.

  • Step 3

    Serve with a cup of tea.
