Gingerbread Muffins
These are a delicious treat.

You can leave out the filling & icing & just eat them plain.

  • How to bake a muffin. Gingerbread Muffins - Step 1
    Step 1

    Heat oven 400/200 degrees.

    Mix mashed banana & egg together.

    Add vanilla spices & salt.

    Stir to combine.

    Step 3

    Add the oil, treacle & milk.

    Stir to combine.

    Step 4

    Add in the sugars.

    Stir through.

    Add in the baking powder & Bicarb.

    Stir through.

    Step 6

    Gently fold in the flour until just combined.

    Step 7

    Pour into cases & bake for 10 mins.

    Turn the oven down to 375/190 degrees & bake for approximately 7-9 mins more, until cooked through.

    Remove from the oven & cool .

    Step 9

    Fill the Muffins with vanilla buttercream.

    Mix icing ingredients together & coat the top of the Muffins with the icing.

    Step 11

    Serve.

Yes, it helped a lot. Thanks for the quick response. Do you have any other recipes from Scotland to share? my grandpa was from Scotland and unfortunately, I never got the chance to meet him or learn much about the food he grew up on

treacle is a dark syrup. It is called molasses in some parts of the world.
