Pie on a stick. That's pretty much love right there.
If you haven't heard of Bakerella you must look her up asap. She makes THE cutest things and when I saw these pie pops on her site I had to make them for Thanksgiving. I'll warn you now, these are a little tricky. I had decided to make my pops out of pecan and pumpkin filling. Little did I know, pumpkin pie filling is REALLY watery. My solution? Pop the filling in the oven in a baking pan for 15 minutes on 350 degrees F to help it solidify. Worked like a charm!
Also, I suggest that you roll your dough out as thin as you possibly can without it tearing. These pops were really over-crusted and felt like it wasn't filled enough.
