An easy healthy dinner that anyone can make
Made this for dinner to celebrate my mum's birthday and it went down a treat! Can't remember where I got the recipe but if you can use any type of vegetable and it'll still taste amazing.
This serves 6 people but 4 of us ate it all. Sorry the picture is so small, nearly forgot to take a picture of the tart so used my mum's phone!

  • Step 1

    Preheat the oven to 200C/fan180C/gas 6. Slice the peppers, and finely slice the mozzarella, courgette, parsley and garlic and grate the zest of the lemon.

  • Step 2

    You can serve the tart as one large one or two smaller ones, if two, then cut the puff pastry in half. Place the puff pastry on baking sheets. Score a 2cm border around the puff pastry and then score each border with a pattern. Then prick the middle of the puff pastry with a fork and chill for 10 minutes.

  • Step 3

    Cover the puff pastry with the mozzarella, red peppers and courgette and drizzle with olive oil. Cook for 15-20 minutes.

  • Step 4

    While that is cooking, mix the garlic, parlsey and lemon together. Once the puff pastry has cooked, scatter the lemon and herbs onto the tarts and cook for a further 2 minutes.

  • Step 5

    Serve up and enjoy!
