Easy to make.
The recipe can easily be doubled.
You can fill with anything you like.
Heat oven 220 degrees.
Melt butter & water together until butter has melted & water is just boiling.
Remove from the heat.
Stir through to form a smooth dough.
Slowly add eggs & beat well until dough is shiny & smooth.
Pour into a piping bag & pipe lines of dough.
Bake for 20-25 mins.
Whip the cream & icing sugar together.
Add the vanilla.
Fill the eclair with cream.
Melt the chocolate & butter together.
Top the eclair with chocolate.
Allow to set.
