You Will Need
453 g Or 1 pound of skinless boneless Chicken breast, cut into large chunks 1 Medium Scallion , chopped .25 teaspoon soy Sauce .5 teaspoon Rice wine 1 tsp Fresh Ginger , peeled and chopped Small pinch of Salt Small pinch of black Pepper .25 teaspoon fine Sugar 30 Wonton Wrappers 170 g Bok Choy 709 ml Or 3 cups chicken Stock 1 Medium Scallion 3 Thin slices of fresh Ginger .5 gram Sugar .5 gram of soy Sauce PInch of white Pepper .25 teaspoon sesame Oil
In a food processor, add the chicken, chopped green onion, soy sauce, rice wine, ginger, sugar and pepper.
Pulse until the meat is ground and comes together in a ball.On a clean surface or cutting board, arrange the wonton wrappers.
For the soup:
Bring a saucepan of water to a boil.
Blanche the bok choy for 2 minutes, remove and set aside.
Drain the water.
In the same saucepan, add the chicken broth, ginger, sugar and pepper and simmer.
Add wonton and simmer for 3 minutes.
Serve and garnish with green onions and a splash of sesame oil.
