The cannelés are soft and crunchy at the same time with delicious notes of vanilla and rum under a thin caramelized layer. They are recognizable by their cylindrical shape.

    Boil the milk, and melt the butter in it.
    In a bowl, combine flour, sugar, eggs and yolks. Mix with hot milk until the dough is smooth. Let the dough rest for at least two hours in the fridge.

    Peel the nectarines and cut them into pieces.
    Butter the cannelé molds and spread the pieces of nectarine add the kirch to the dough if wanted, mix and fill 3/4 of the molds with ough.
    Cook for about 50 minutes Unmold the cannelés. Present them on a plate decorated with slices of nectarine.
