Step 1Heat oven 335/170 degrees.
Place 4 oz of milk & oil in a cup. Set aside.
Mix together remaining milk, vanilla & eggs. Set aside.

Step 2In a stand mixer Combine flour, sugar, baking powder, bicarb & salt.

Step 3Slowly add the butter until it resembles sand.

Step 4Add milk & oil to the mixture.
Mix for 2 full mins.

Step 5Add 1/3 of the egg mixture.
Continue until all egg is used.

Step 6Pour into tins & bake for 25 mins until cooked through.

Step 7Stack the cake with jam & cream.

Step 8Sprinkle with icing sugar.

Step 9Cut & serve.
