Learn how-to cook a Shiitake Bacon as a vegetarian alternative in #TechniqueTuesday and then sprinkle them over a bowl of Miso Mac N Cheese.
Wash the shiitake mushrooms and pat dry.
Cut into thin slices like.
Place in a bowl and drizzle with the olive oil and liquid smoke. Mix in well.
Line a baking sheet with baking paper and spread out the mushrooms on top.
Season with plenty of sea salt and black pepper.
Bake in an oven for 45 minutes at 170'C, removing every 10 minutes to shake.
Remove when crisp and serve. They taste amazing sprinkled on top of mac n cheese!
