Try zoodles - a perfect alternative to pasta noodles or Ramen.
I love Ramen noodles as much as the next person, but we've also got to get our veggies in somehow! Zucchini noodle or zoodles are a great alternative to any noodle recipe.
You could eat this raw, or lightly saute in coconut oil (which is what I did). If eating raw, simply skip the saute part! Still, a healthy meal regardless of what you choose.
Mix together all the ingredients for the dressing in a small bowl and set it aside. Put a skillet on the stove at medium-high heat, wait 1-2 minutes for the pan to get hot, add a bit of coconut oil, then sautee the bell peppers for about 6 minutes. Remove the peppers to a plate, and add the zucchini noodles to the pan. Gently sautee them for about 2 minutes.
