Recipe given to me by my boyfriends' mate- Sam
Great for barbecues or just to eat a whole bowl on your own!
Take silken tofu and drain, then pat dry.
(I like to use Blue Dragon or Mori-nu)
Cut up into squares and add to a mixing bowl.
While chocolate mints are melting add in 2-3 tbsp of marg and allow to melt together.
Keep your eye on this and stir!
While you're waiting for it all to melt and in-between stirring- mix the tofu.
Use a hand mixer or blender to mix all the tofu together to make very thick, bland sauce.
Once choc and marg is all melted together, add the melted mixture into the tofu and combine with a hand mixer.
Keep mixing until it is all combined and looks creamy
