    First preheat the over to 200oC

    Put your rice on to cook in boiling salted water.

    Meanwhile, chop the onion into bite size pieces and fry in a little oil till soft. Tip in the tomatoes and a pint of stock, then salt and pepper to taste. leave to boil for about a minute then bring down to a simmer.

    When the rice Is cooked, drain then mix into the tomato sauce and place in a small baking try, you can line it if you like. Bake for about 30minutes or until the top is golden.

    Serve immediately with the melted cream cheese or cheddar on top.
