Spanish Chicken & Potatoes
This is a hearty, easy to make meal.
It tastes better if it is left overnight.
The flavours really improved.

Step 1Cook the onions, garlic & chorizo for a few mins in olive oil

Step 2Add the tomato purée & peppers.
Cook out for a minute.

Step 3Add the chicken portions.
Cook out for approximately 10 mins.

Step 4Add the pasata.
Bring back to the boil.

Step 5Add the chicken stock.
Bring back to the boil.
Simmer for approximately 1 hour.

Step 6Add the potatoes.
Cook until the potatoes are soft.

Step 7Serve with rice or on its own.
