Sour Cream Chicken Enchiladas
A nice mild Enchilada.
Serve with extra sour cream.
Melt butter & add flour.
Slowly add the chicken stock.
Allow to thicken a little.
Add salt, chilli & Oregano .
Add chicken breast.
Simmer for 15 mins until chicken is cooked through.
Shread the chicken.
Add the sour cream to the sauce.
Add chicken & cheese to the tortillas.
Sprinkle a little cheese on top & grill until melted
Sprinkle a little cheese over the top.
Place in the grill or oven to melt.
