The cheesecake is best made the day before you need it.
Heat oven 160 degrees.
Mix biscuits, brown sugar, vanilla & butter together.
Press into a tin.
Top with chocolate chips & marshmallow.
Mix cream cheese, corn flour, sugar & vanilla together until smooth.
Add sour cream, heavy cream & eggs.
Bake in a ban Marie for 1 1/2 hrs until set.
Turn oven off & leave cheesecake to cool in oven.
Remove & refrigerate.
Pour chocolate sauce over the top of cheesecake.
Top with marshmallows.
Blow torch to colour.
