crumbly pastry with a surprising sweet savory filling
I first made this when i had some excess pastry knocking around the fridge,it was a bit of an experiment but it really worked not only does it look beautiful its also really tasty.

  • Step 1

    start by making the pastry,you will need 150g of plain flour to this add 100 grams of cold cubed butter,work with a food processor or mixer if you don't have one of these combine with a spoon.You want to coat all the butter with the flour and reduce the size. the fined mixture should resemble a large bowl of buttery flour flakes.To this add 2 tablespoons of ice cold water keep adding water until your mixture is fully combined -advise 2 teaspoon increments at a time.Finally split dough into three bowls add turmeric to one and add a splash of the purple juice from the beetroots to another,incorporate this into the mixture without heating it too much.the third portion remains plain.then pop the dough in the freezer for at least 30 minutes.

  • Step 2

    When half an hour has past pull the dough out and combine roll out on a slightly floured surface you should have a sheet of fabulously marbled dough,shape into a large circle and add to a parchment lined baking tray.
    Pop back in the freezer whilst you chop your beetroot into slices.Add a glug of olive oil to a heated pan with some sage leaves to make a sage infused oil.

  • Step 3

    add beetroot slices to the dough in a circular fashion.fold over the edge of the dough rather like a galette .Drizzle over the sage oil and crumble over some dried sage. Bake in the oven for around 20 minutes on high heat around 200 fan oven
