Great for starter.
It's a cold and rainy day dish. Please serve with chunky crusty bread!
Set the oven to 180 degrees celsius and then line a tray with tin foil.
On your tray, mix your carrots and olive oil together and season with salt. Put it in the oven for 25 to 40 minutes.
When the roast carrots are done, in a pan cook the garlic and onion till translucent and then add the spices.
Pour in the vegetable broth and the roast carrots until the carrots are soft.
Blend the butter and lemon juice with a blender until smooth. Serve it warm.
