risotto sausage parmesan cheese italian
Italy is famous for pizza and pasta the most... I guess... but you would be surprised how many amazing risottos is here too and other delicious recipes made of rice . . .

I chose this risotto because is quick, pretty easy and cheap to make..
Well, you need to buy artichokes off season ;)

So, why not ?! :)

And I tell you a secret of mine.. I did use a lower part of the veggie as a curiosity... I find it tasty the same and how we say in Italy "non si butta niente" ( we don't throw anything) .. that's why the name CONTADINA .. farmer ... They knew very well how to live on low budget but how to enjoy their life anyway ;) ... as we often speak of crisis in Italy ..

    I made a different recipe with the 'flowers' 'heads' of artichokes.. and I discovered recently tha the stems are as tasty ;)

    They just need to be peeled... like rubarbh.. I would say.. to make it more clear.. comprehensive..

    Who doesn't know, the artichokes tend to go dark.. so it's necessary to put them in the water with lemon - cut the lemon into quarters and squeeze even the juice in the water so they keep nicely green :)

    Then cut them thinly - 0.5cm .. or 1/2 inch .. :)
    and return them into the lemon water..

    Prepare the vegetable stock.. 1cube for 500ml ..

    Heat the Extra Virgine Olive oil in your pan and add the chopped onion..

    Saute for a few minutes to become traluscent..

    At that point add the sausage - crumble it into the onion .. and continue frying for a few minutes on a medium heat ..

    When the sausage doesn't look raw anymore, add the drained sliced stems of artichokes and give it all a nice stir ...

    After a few minutes add the white wine (optional) - 50ml or so...
    and let evaporate.. or cover for a few minutes..

    Once the wine evaporated, add the rice 200 - 300 g (more than for two people ;)

    and keep stirring ... the rice will absorb the juices ..

    After a few minutes you can add the vegetable stock - stir well and cover - it will cook faster ;) but lower the heat to minimum ..

    IF you are a cheese lover like me .. then you can add some 'ends' of parmesan - literally the 'peel' ;)

    Cut it into small cubes-pieces and be sure it will get nicely soft and yummy in the end...

    Remember: NON SI BUTTA NIENTE :D (do not throw anything)

    Cover again with the lid and simmer till the stock will get absorbed and the rice is cooked .. al dente ... not hard.. not overcooked ..

    At this final point you just turn off the heat.. let it sit for a few minutes with a spoon of grated parmesan..

    Serve in plates and sprinkle with more parmesan cheese over and BUON APPETTITO !!! :) :) :)

    Maybe some chopped parsley is fine too... ;)
