Simple, tasty, and good for you.

Chop or Dice all of your vegetables.
Put your mushrooms,onions, and bell peppers into a large skillet with the olive oil. Sautee them untill they start to get softer.
Add everything else. Sautee for about 10 minutes. Make sure you stir everything up really well.
Serve over pasta, on garlic bread, or as a side dish. *Side note, I like mine with a lot of garlic, which some don't, so I guestimated at two cloves. I usually use about 4. Enjoy :)
