Quick Italian Eggs - Two eggs cooked in Marinara Sauce with spinach and mozzarella cheese.
Pour the marinara to a small sauté pan.
Add the spinach and break in the eggs. Season with salt and pepper and top with cheese.
Put pan on stove at a medium to high heat.
As soon as the Marinara starts bubbling, cover and cook for 3 - 5 minutes.
We cooked ours for 4 minutes and it gave us a medium egg.
