Not your usual Brunch;)
Whether you are looking for a breakfast recipe or brunch, this breakfast will be an explosion of flavours. It includes spicy soft potatoes topped with eggs. Trust me, it tastes just as nice as it looks.
The best thing about this recipe? You can make it with ingredients that everyone has easily accessible in their kithed, such as eggs, onion, potatoes and tomatoes!!

  • Step 1

    Cut your potatoes into small squares and cook them for 5-10 minutes with some olive oil until they begin to get soft.

  • Step 2

    Once it feels like they are 80% cooked, add in your diced onion and chopped garlic and sautee everything for another 5 minutes. Also add in some salt to taste, chopped green chillies and mixed herbs.

  • Step 3

    Now you can add in all your spices and a peeled potato chopped into small pieces (you can use chopped tomatoes as an alternative). Once the tomato is in, mix everything carefully, ensuring that you don't break or mash the potatoes and let this cook for a further 3-4 minutes on low heat.

  • Step 4

    Lastly, break 4 eggs on top of your potato and tomato sauce and cover the pot with a lid so they cook with the steam. Once the eggs have cooked, it is ready to serve!
