Portuguese Orange Tarts.
Light & airy Tarts.
The mixture seams runny before cooking, don't worry, this is normal.
Heat oven 180 degrees.
Beat eggs & sugar together for 3 mins.
Pour in orange juice, zest, butter & vanilla.
Stir to combine.
Gently fold in flour, salt & baking powder.
Pour into Muffin tins.
Bake for 13-15 mins.
Turn off oven.
Sprinkle the top of the cake with sugar.
Place back into the oven for 2 mins.
