Portuguese Chicken with Rice
Quick, easy & tasty.
Cook rice in water.
Coat chicken in flour, salt, pepper & oregano.
Fry in oil & 1 tbsp butter.
Remove to a dish.
Add 1 tbsp butter, mushrooms & garlic.
Cook for 10 mins.
Add the wine cook for a few mins.
Add the stock.
Bring to a boil.
Add chicken to pan.
Cook until sauce is thickened.
Serve the chicken over the rice.
