Quick and Easy Breakfast, Lunch, or Dinner!
This is a quick and simple dinner i just made up, because I was hungry with limited ingredients. It turned out quite wonderful =]

That's not mine but it looks pretty darn close, I was too famished to stop and think to take a picture, haha

  • Step 1

    First take your two eggs and crack them into a ramekin, or custard dish, or whatever small bowl you might have.
    Add salt and pepper to taste, and any other spices you may like in your eggs.
    add a splash of milk and whisk with a fork until the whites and yolks are relatively one, no separate blobs of either.

  • Step 2

    melt the 2 tbsp of butter in a fry pan on high heat, and once it is melted pour the eggs mixture into the pan. wait until it is almost cooked through and use a spatula to push egg from the side [just to push it up not to reform the egg in anyway] then flip the egg completely over to cook the top half through and take off the heat [as soon as you flip it].

  • Step 3

    take a slightly larger fry pan and put it on that same burner. Spray with non-stick spray and lay a tortilla down. sprinkle half of your cheese on it, and lay down the egg.
    sprinkle the other half of your cheese on the egg and lay the other tortilla down on top.

  • Step 4

    let the bottom cheese melt and then using a large spatula flip the entire thing over, and let that cheese melt through, and the tortilla crisp up.

    take off the heat and cut into pieces

  • Step 5

    mix the salsa and sour cream together as a dip, and Enjoy =]

    You could also add some meat to this or veggies to make it more wonderful, but like I said I had limited ingredients.

This is great! It reminds me of a common food you can get at roadside stands in Uganda, called a Rolex (or roll-of-eggs). It's pretty much the same thing, except rolled up. Delicious, and so filling! Great idea!
