Vegan version of Fideo = Less fat but still yummy!
This is one of my favorite dishes. It is so simple and comforting, and CHEAP! Perfect for when you don't have much money or time.
I have many memories with this warm pasta it can be made thicker or thinner. Thinner is usually called sopa *soup*.

Some restaurants are even beginning to offer this Mexican peasant dish!

p.s. This version is thicker, NOT sopa
p.s.s. If you have vermicelli and tomato sauce you can also make this.

    Step 1

    First step gather your ingredients

    *Coil or short (cut) style Fideo
    *Half small Onion
    *Vegetable Oil
    *Salt & Pepper to taste
    *Chili powder or Hot sauce
    *Tomato Sauce
    *Tomatoes optional
    *Season salt if you LOVE it like me :)

    Put some vegetable/olive oil in a pan, heat on medium heat.

    Put 3 oz. of fideo in the pan, stir them until they are evenly coated in oil.
    Now let the pasta brown LIGHTLY, stay by the stove and stir occasionally.

    note: If you want sopa add around 2 1/2 oz. fideo

    Once the fideo looks like this you add 1 can of tomato sauce, Using tomato sauce can, add 1 1/2 can of water to pot.
    Be careful between the sauce and water the sauce will heat up fast, and splatter, It is a good idea to remove from heat and DONT STIR until water and sauce are both in.

    Add Onions, tomatoes if desired, and seasonings.

    Stir before covering with a lid. The lid keeps the stem in and makes it cook faster.

    Check your pasta in periodically (every 5 mins) it should look something like this. If you are making thicker the bottom will burn if you do not stir occasionally.

    Once the pasta is tender check the consistency and taste. If it's too thick add more water. Better to be too thick you can fix that. Thin watery fideo is pretty gross.

    I like to sprinkle a little cheese and some fresh cilantro on top. Add a homemade tortilla and you have a super yummy comforting meal. :)

    This is also good when combined with fresh pinto beans. I like to mix it all up...yes I am strange.. :)

Glad you liked it. Try using fresh veggies when you have the time the roasted flavor really makes a difference.

Totally made it tonight for dinner! Angel hair pasta works as well, and it's AMAZING with a can of diced tomatos and peppers.

Yeah I'm Hispanic. Spanish and Mexican heritage. I use the fun shapes when I make it for little kids, I tend to like my fideo the way I grew up eating it.

You should have got the letter noodles!! Or the stars, that's what my dad always got for me and my sisters when we were little. And I have to ask if you have some Hispanic background?? Because this is pretty much identical to how my dad makes his and he is from Mexico.

Note-this is traditionally made with chicken broth but I make mine the Vegan/cheap way so it may taste differently from what you remember.
