My Mexican twist on French Onion Soup with tortilla chips and sweetcorn!
I love trying to invent new recipes with whatever I find in the kitchen and this week there was a half a bag of tortilla chips and some onions, which I decided to turn into my take on French Onion Soup. It was really tasty and made enough for four servings.

Step 1Slice and fry the onions until golden.

Step 2Place in a blender with the sweetcorn and blitz for a few seconds so that it retains some texture.

Step 3Place in a pan and add the vegetable stock and crush in the tortilla chips.

Step 4Bring to a simmer, stirring until the tortillas have softened into the soup, add the garlic powder and season with salt and pepper.

Step 5Serve hot with some crunchy tortilla chips and a few shakes of Tabasco sauce.
