A vegetarian take on Byron's Byronaldo burger with bacon and Bovril onions!
Place the burgers under the grill to cook and slice the onion into thin strips.
Heat a little olive oil in a frying pan, add the onions and then crumble over the stock cube to season. Add the water and leave to simmer until all the liquid has soaked into the onions.
Meanwhile, in another pan, fry the Quorn bacon until crispy.
Slice the brioche buns and toast gently under the grill.
Spread the buns with fresh lettuce and add the burgers.
Squeeze on some burger sauce.
Top with the cheddar cheese.
Place under the grill for a minute until the cheese has melted a little.
Top with the bacon, cooked onions and some crispy onions.
Serve with a side of pickles!
