Zesty lemon Muffins.
Good recipe to use up left over yogurt.
Heat oven 400/200 degrees
Combine the flour, sugar,baking powder, bicarbonate,salt & zest.
In a bowl combine lemon juice, egg, yogurt & butter.
Stir dry & wet ingredients together until just combined.
Pour into cases.
Bake for 20-24 mins until cooked through.
combine the icing ingredients.
Stir to combine.
Add a little water if needed.
Spoon icing over Muffins.
