LEMON CURD SPRINKLE CUPCAKES
Delicious and super lemony cupcakes filled with lemon curd and topped with lots of sprinkles!
Preheat oven to 350 degrees and line a cupcake tray with cupcake liners
In a bowl mix the coconut oil, stevia and the vanilla. Add the eggs and mix
In two additions add the almond milk and continue mixing for 2 minutes or until everything is well incorporated
Pour the batter in the cupcake liners and place in the oven for 20 minutes or until done. Remove from the oven and let them cool completely
With the help of a knife cut out a small hole in the center of the cupcakes, remove the center piece and set it aside. Fill the hole with the lemon curd and top it again with the cupcake top.
Place in the fridge and let them cool for 20 minutes.
Decorate with frosting
