The originality, effect and overwhelming simplicity of this dish make it one of which I am particularly proud. It is nothing more than frozen sorrel leaves dusted with icing sugar. For maximum effect, it must be eaten within 30 seconds of leaving the freezer. Instant lemon sherbet.
Lay the sorrel leaves out on baking trays and place in the freezer until completely crisp and frozen.
Remove from the freezer, dust heavily on both sides with icing sugar and serve immediately.
