Popular teatime treat from Wales
Welsh teatime treat passed on through generations. Perfect for making with kids!
Mix the flour and salt together in a large bowl and rub in the margarine or butter.
Add the sugar and currants and mix well.
Pour the egg mixture in and mix until you have a stiff dough.
Roll the dough out on a lightly floured board until 5mm (1/4 inch) thickness and cut out rounds with a biscuit cutter.
Heat the bake stone or a heavy iron griddle. Rub it with butter and wipe the excess away. Put it on a direct heat and wait until it heats up. Cook for 2–3 minutes on each side, or until golden brown.
Serve immediately sprinkled with a little extra caster sugar.
