Quick and easy fried snack for lazy days at home :)
I love all things fried! It's the southern woman in me I suppose. But sometimes I just do NOT have time to clean, cut, and batter a chicken or other foods.

So, for those days when you just want a quick fried snack, try these! I like to think they're still healthy. It is a vegetable still!! But I really have no idea. Haha! Enjoy!!

  • How to cook a vegetable fritter. Fried Black Eyed Peas - Step 1
    Step 1

Gather up all of your ingredients. I used leftover bacon grease (I store it in a glass jar EVERY morning) for the frying. I also mixed about a tablespoon in with the peas, but that's entirely optional.

You can use any type of peas for this as long as they are cooked, but I used canned. It's just easier. Drain and mash them.

Don't forget to beat your egg(s).

    Step 2

Mix everything together except for your frying grease/ oil. It'll look like a big mushy mix.

Don't forget your spices!! My family has a very wide range of differing taste, so I don't season foods very much, but you can add as much or as little of anything as you like.

    Step 3

Heat your grease on Medium/ High heat. Make sure it's HOT before you start to fry!

Drop by the teaspoon into the grease and fry until golden. It only takes a few minutes. Not very long at all, so keep watch!!

Once they're all coked up, cool them on a plate with paper towels under them to catch extra drippings.

    Now, enjoy!!
