You Will Need

Step 1Heat oil in a pan.
Cook the chicken with salt & pepper.
Place in a dish.

Step 2Heat oven 190 degrees.
Cook the onion, garlic & ginger together in the pan.

Step 3Add the peppers.
Cook out for a few mins.

Step 4Add the coconut milk & simmer until thickened.

Step 5Pour over the chicken.
Bake for 10-15 mins until chicken is fully cooked.

Step 6Sprinkle with chilli & parsley.

Step 7Serve.
