Step 1Heat oven 180 degrees.
Cream butter & sugar together.

Step 2Add eggs & vanilla.
Mix through.

Step 3Add flour, baking powder, salt & coconut.
Gently fold through.

Step 4Add coconut milk.
Stir to combine.

Step 5Pour into cases.
Bake for 20 mins.
Allow to cool.

Step 6Ice the Muffins & top with coconut if you wish.
Serve
