No bake brownies slathered in chocolate and caramel.
These babies are easy to make, and are gluten free and vegan.
You Will Need
Put the walnuts in a food processor and blend until in smaller pieces. Add the rest of the brownie ingredients and blend until a crumbly dough. The mixture should stick together between your fingers a little.
When ready, put the mixture into an 8" cake or pie dish. Use a spatula to press it in and smooth it out evenly. Put it in the freezer to set while you make the caramel and frosting.
To make the caramel, add the dates to your food professor and blend until they are broken down. Add the rest of the caramel ingredients and blend until smooth and creamy. Use a rubber spatula to scrape down the sides on occasion. When ready, remove from processor and use your spatula once more to spread it messily on top of the brownies.
For the frosting, add all of the ingredients to a bowl and whisk with a fork until it is mixed. Pour the chocolate over the caramel, again using a spatula to even it out.
Put in the freezer for 25 minutes to set before removing and cutting into small squares. Best stored in the refrigerator and served chilled.
