Toss the apples with 1 tablespoon of lemon juice – this stops them from going brown.
Place the spinach in a large bowl; remove the long stems and bruised leaves.
Whisk together the remaining lemon juice, olive oil, vinegar, honey, salt, and ground pepper to taste.
Toss the spinach with apples and the dressing. Top with cheese and walnuts. If you happen to have grapes in then you could add these too. You can also swap the blue cheese for cheddar if you prefer. Serves two for lunch or a starter, but you could also make up a batch to take to a party.
