A breakfast to get excited about!
This breakfast is a chia oatmeal blend made into a parfait with layers of delicious apple filling and vanilla greek yogurt.

  • Step 1

    Combine the chia oatmeal ingredients in a fully sealed container and store in the fridge overnight to soak.

  • Step 2

    Combine apple filling ingredients in a saucepan until the apples are soft. Add more water if necessary and feel free to add 1 tbsp of honey if you like things sweet. ( I definitely didn’t find it necessary)

  • Step 3

    Coat oats with coconut oil, cinnamon and coconut flakes and bake in the oven on a cookie sheet for 25 mins.

  • Step 4

    Make each of these individual dishes the night before and refrigerate separately. To make the parfait, layer the ingredients beginning with vanilla Greek yogurt on the bottom; then the chia oatmeal; then the apple filling. Repeat this layering as many times as you wish (or until you run out of ingredients!) and top with the oatmeal topper. Garnish with pinch of coconut flakes. Enjoy!
