Zucchini Bake - Easy for those family feasts with minimal impact on the week's budget!
So the family was over the other night for dinner and I always struggle to make enough for everyone, plus I had the bare minimum in the fridge and pantry! Then it dawned on me….ZUCCHINI BAKE!!
This bake is perfect for large dinners as it’s really easy, really tasty AND really cheap (which my back pocket loves) and can be changed to have more veggies in it if you have them!!
You can serve this with anything too!

Step 1Collect all ingredients. Preheat oven to 180 degrees (fan forced).

Step 2Mix all ingredients together well.

Step 3Place in a large baking dish and flatten down ingredients.

Step 4Bake for 50-60 minutes (to ensure it is cooked through, test it with a skewer, if it comes out clean it's ready).
Serve with anything!
