A yummy vegetarian recipe bursting with flavor!
I completely made this up myself the other day! It's really great over rice. Sorry about my ingredient amounts, I always just go with the flow....and so far it's worked out!

    Turn up the heat on your stovetop (I did to around 6 on mine) and heat up your pan, adding enough olive oil to line the bottom of the pan.

    Cut up your ingredients. I halved my tomatoes, "diced" my onions, chopped up my garlic and chile small, and just pulled apart the cilantro.

    Put your garlic and onions into the pan first. Let those simmer a while, stirring from time to time, just until they get light brown around the edges.

    Add the cherry tomatoes and mix. Let them all mingle until the tomatoes get soft-like.

    Turn down your stovetop to around 3 or 4. Add a tablespoon or two of soy sauce and mix together. I eyeball it.

    Add cilantro and green chile pepper and mix! I'm not completely sure what kind of pepper I used, but they aren't completely spicy, just mild. It adds a nice flavor to the dish.

    Last, add a sprinkle of feta cheese and mix. It sounds odd, but it melts in and tastes delish!

    Your done! Top off some rice or pasta and enjoy!
