Some bread for the table?
This focaccia uses a wholemeal bread mix, so it's a little heavier than focaccia, but it's still delicious!

    Mix together the sugar, olive oil, warm water and yeast in a bowl and leave for the yeast to froth up for about 10 minutes.

    Meanwhile sieve the bread flour and salt into a bowl.

    Make a well in the middle of the flour and then pour in the yeast mixture.

    Knead the bread until smooth and then place in a oiled bowl and cover.

    Leave to rise for an hour.

    When the dough has risen, roll out on to a floured surface and top with a generous handful of sliced black & green olives.

    Sprinkle with fresh rosemary, dried herbs and salt & pepper.

    Fold the dough over and knead the olives and herbs into the bread. Form into a loaf shape.

    Coat a loaf tin with parchment paper and coat with oil. Place the dough in the tin.

    Press shallow holes in the top of the bread with your fingers.

    Coat the top of your bread with caramelised red onion.

    Top with some more green and black olives, press a sprig of rosemary into each of the holes and grate lots of parmesan cheese on top.

    Bake in a hot oven at 200'C for 25 minutes and top with a few parmesan shavings before serving.
