An easy and really really good fish and rice plate with a Mexican twist ;)
So again I was really hungry and I was craving fish so I went ahead and cooked for me and my dad, the measurements I gave it's for 2 or 3 servings, we eat a lot of fish in this house ha ha. I used catfish because it's my favorite but you can go ahead and use the one you preffer and for the Tomato sauce I used Val*Vita which is a Mexican brand and Chicken Broth cubes from the Knorr Mexican Brand. I googled some pictures of what I used for you :P so enjoy!

  • Step 1

    RICE:
    The rice takes a bit more time than the fish to be done so I advice you start with it. just pour like a tbsp of cooking oil into the pot along with the chicken broth cube and let it heat for aprox. 1 min and stir.

    Pour the cup of rice into the pot and stir, let it fry for about a minute and then pour half of the val vita pouch in as well. Let the rice absorb the sauce for about 2 mins, if you need to pour some of the water inside the pot and then pour the rest of the sauce and keep stirring for about another minute.

    Pour the first cup of water into the rice and let it cook for about 8 mins and then pour the second one and close the pot to let the rice cook. Sometime it kinda' bursts but it's ok, just check and stir occasionally so it doesn't get burnt.

  • Step 4

    FISH:
    Heat the oil for aprox. 2 mins. While you wait, take your 2 eggs and break them into a bowl and blend with a fork.

  • Step 5

    Take the already cut up fished (or if you prefer fillets that's ok too) and pass through the eggs and then the bread crumbs (The way I do it is I buy some already spiced up bread crumb mix but you can make your own), then just put it into the frying pan. and turn in about 1 1/2, 2 mins.

  • Step 6

    Take out of the oil and let it sit for about a min in a plate covered with a kitchen napkin to get that excess oil off and repeat with the rest of the fish.

  • Step 7

    You can serve this with a little salad, lemon and of course Chipotle sauce on top or on the side and some sour cream and a pinch of salt for the rice.
