Make this heart healthy low fat soup in 15 mins!
This is one easy soup to prepare. Not only is it low in fat, cholesterol and sodium it has many health benefits. Asparagus is a good source of Vitamin K, A and C, as well as folate. Asparagus is also famous for its Anti-Inflammatory and Anti-Oxidant Benefits.

With this recipe you have no reason not to make a healthy and delicious soup.

You Will Need

  • Step 1

    First gather your ingredients, you will need.
    *2 small potatoes peeled and cut into 1 inch pieces
    *1 Bunch asparagus or 1 pound
    *1 can vegetable broth (I used 1 tbsp better than broth vegan base and 2 cups water
    *1 small onion

    Bring all ingredients except for asparagus to boil. Simmer until potatoes are almost tender.

    Trim asparagus by "snapping" off the bottom stringy part. Slice asparagus in half and into 1 inch pieces. Simmer with potato mixture until asparagus and potatoes are tender

    Use your blender to smooth the mixture into soup. This is not my picture but is my blender so that counts right :)

    Once done return to pot, check seasonings and allow to simmer until desired consistency is reached.

    Garnish with asparagus buds and paprika.
