Shortbread, white chocolate and strawberries, perfect!
I looooved these when I was pregnant, with my favourite tea. Perfect end to an afternoon with ya feet up

  • Step 1

    Preheat oven to 160•c or 140•c for fan forced oven

  • Step 2

    line 3 large baking trays with baking paper. Using an electric mixer, mix butter, sugar and vanilla Until mic very well. Stir in sifted flours until mixed well

  • Step 3

    Divide dough in half. Roll one half into balls, approximately 1 Tbls of dough for each.
    Place on prepared trays, slightly press a fork onto top of balls to slightly flattern. Repeat with remaining dough.

  • Step 4

    Bake for 8 to 10 minutes or until just golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool.

  • Step 5

    To make strawberry ganache, microwave chocolate and cream on high for 1 to 2 minutes, stirring every 30 seconds or until smooth and melted

  • Step 6

    Stir in strawberry essence. Tint ganache pink with food colouring.
    Refrigerate until mixture is thick. Sandwich shortbread together with strawberry ganache.
