low-calorie but sooo delicious!
I tried this recipe to make some nice muffins for the children. They like them!
batter the butter, lemon skin and sugar. add the eggs gradually. then, mix in the flour.
mix in the oatmeal, the grated carrot, the lemon juice as well as the milk, and add some more milk if the dough is to dry.
put the dough in 15 muffin forms and bake it at 180°C for 30minutes.
mix some icing sugar with orange juice or water and put the mixture over the cooled off muffins.
