Think of this as a ketofied tea sandwich. Feel free to try an equal amount of another protein, such as smoked whitefish, hard-boiled egg (see The Perfect Hard-Boiled Egg [page TK]), or leftover chicken.

In a large bowl, combine all ingredients except the cucumber. Mix gently until combined and adjust seasoning to taste.
Fill the center depression in each cucumber half with the fish mixture. Place cucumber halves together, as if they were hoagie rolls. Wrap in food wrap and store in the refrigerator until ready to eat.
* To deseed a cucumber with ease, run a spoon down the center to scoop out the seedy “marrow.”
